Adam Ashe
Executive Chef
Adam Ashe joined the Singapore Marriott Hotel as the new Executive Chef in 2009. One marvels at how his passion for cooking started brewing whilst he was building an enviable career in finance. Fortunately for all foodies, he realized he found more satisfaction whipping up a great meal in the kitchen than crunching figures in an office.
At 30, the former banker traded his power suits for aprons and entered Le Cordon Bleu Culinary College in London where he was trained in the knowledge of classic French cuisine and modern international culinary techniques. Endeavoring to learn from the best, he joined 1-Michelin star outlet Operkallaren Restaurant in Stockholm, Sweden, upon graduation.
Over the span of the next 10 years, Adam honed his culinary skills through stints in top restaurants in cities like New York, Sydney, Shanghai and Hong Kong. Always one with an appetite for new challenges, he took up the position of Executive Sous Chef at JW Marriott Hotel where he played a pivotal role in implementing and promoting a program of sustainable seafood throughout the hotel’s various dining outlets. That experience led him to a greater conviction of the importance in sourcing for sustainable produce with traceability. Producers and suppliers who take great care and pride in their methods of harvesting and rearing will naturally result in produce of higher quality with better flavour and texture. This is a must-have for a great dish.
